Beef stroganoff has always been one of my favorite meals. It’s amazing when made fresh and even better with leftovers. So, I spent years trying to find the best recipe and what I ended up doing was modifying the original recipe to what I and my family felt tasted better. Second only to my baked spaghetti recipe, this is a tried and true family favorite for us and on that my grown kids still come home to have Mom make.
What I ended up with was a rich, creamy sour cream based stroganoff sauce that makes the meal all by itself. Combine that with tender egg noodles or potatoes and you’ve got dinner in under an hour that the whole family will love.
The best part about making this recipe is that for the most part, you probably already have the ingredients in your pantry. Stew meat tends to be the odd ball out but if you don’t have any, just use ground beef in it’s place for a ground beef stroganoff instead. It won’t taste much different.
It’s super budget friendly too coming out at about $10.00 for the whole skillet making it just over $1.00 per serving per person. With today’s grocery costs, you simply can’t beat a budget friendly recipe that cooks on the stovetop and not the oven and that feeds everyone so cheaply.
What is a good substitute for sour cream in beef stroganoff?
True beef stroganoff has a sour cream based sauce. But I am well aware that not everyone likes sour cream. If you’re one of those people, don’t worry. You can still make your own version of stroganoff using a substitute.
Just be aware that changing that will change the final taste of these savory flavors.
The best sour cream substitute in any recipe is hands down plain Greek yogurt. It has that same tangy flavor and the consistency is about the same. The trick to using Greek yogurt in place of sour cream is to use full fat. Lower fat versions are more likely to curdle when you add it to the sauce. Follow the recipe as is if you’re swapping.
Can you freeze beef stroganoff?
Yes! I have frozen this one many times and it freezes amazingly! To freeze, allow it to cool completely then freeze frozen in freezer bags. To reheat, simply pop it back on the stove over medium heat and stir often to keep it from burning or stick it in the microwave for a couple of minutes. The sauce stays together and doesn’t separate at all!

- 1 lb Beef Stew Meat
- 1 12 oz bag Egg Noodles
- 1 Medium White Onion Chopped
- 3 Tbsp Minced Garlic
- 3 Tbsp Butter
- 1 Packet Beefy Onion Soup Mix
- 2 10 Oz Cans Cream of Mushroom Soup
- 12 Oz Full Fat Sour Cream
- 1 ¾ C. Whole Milk
- 1 Tbsp., Worcestershire Sauce
- 1 tsp Paprika
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 Beef Bouillon Cube
Instructions
- In a skillet, melt the butter. Add 1/2 of the onion and the garlic and saute until onions are translucent and garlic is fragrant.3 Tbsp Minced Garlic, 3 Tbsp Butter, 1 Medium White Onion
- Add stew beef and brown. Remove beef from the skillet.1 lb Beef Stew Meat
- While beef is cooking, cook noodles al dente according to package directions. Drain well. Rinse lightly with cold water to stop cooking.1 12 oz bag Egg Noodles
- Add milk, remaining onion, soup mix, and all seasonings including the bouillon cube to the skillet. Heat over medium heat until bubbly.1 Packet Beefy Onion Soup Mix, 2 10 Oz Cans Cream of Mushroom Soup, 1 3/4 C. Whole Milk, 1 Tbsp., Worcestershire Sauce, 1 tsp Paprika, 1 tsp Garlic Powder, 1 tsp Onion Powder, 1 Beef Bouillon Cube
- Remove from heat. Stir in sour cream then add beef back to the skillet. Mix well.12 Oz Full Fat Sour Cream
- Stir in pasta and serve hot.
