Growing up, there was always someone in the family or at church who was making zucchini bread or one of their other yummy zucchini recipes. I grew up loving it and I still do to this day! It just isn’t summer or fall without a warm piece of zucchini bread or a yummy zucchini casserole. Our favorite is cheesy zucchini rice and my Emma does an amazing job at making it (better than I do!). Don’t get me wrong though. I will chow down on just about any delicious zucchini recipe that is put in front of me!

One of the things that I adore about zucchini recipes is that they are usually incredibly quick to make and they’re incredibly versatile. As a busy mom and small business owner, I’m all for anything that doesn’t take me hours to do. I love pairing a zucchini side with an easy chicken recipe like my garlic and herb chicken thigh recipe and bam! Dinner done in no time flat!
