Is anyone else tired? I am right there with you. Between business, family and everything in between, our days are pretty much a whirlwind of activity. That’s why some nights, it is so night to have an easy dinner idea to make. Usually when I need that easy meal, I opt for one of my favorite chicken recipes since they’re easy and fairly cheap.

For us, especially when we’re trying to eat budget friendly meals, that means finding an easy chicken thigh recipe to make. Chicken thighs take center stage in this recipe, and for good reason. They’re not only delicious but also typically the most economical cut of chicken. Their rich flavor and juicy texture make them a perfect choice for this dish, allowing the herbs and spices to infuse every bite with savory goodness. But, if you prefer to use boneless, skinless chicken breasts instead, this recipe works well for that as well.

What Herbs Go Well with Chicken Thighs?

This recipe combines the aromatic flavors of an Herbs de Provence seasoning blend with the flavors of salt, black pepper, garlic and onion powder to create an incredibly easy dish that’s both flavorful and budget-friendly.

While you can buy the Herbes de Province herb blend, why would you when it is incredibly simple (and fairly cheap) to make? It takes less than 5-minutes to make homemade Herbs de Provence and you likely have most of the ingredients in your pantry already. Make it with fresh herbs if you have them and if not, dried herbs work just as well.

How to Get Chicken Skin Crispy?

Baking chicken thighs can either end up with crispy, golden brown skin or a soggy mess. If you don’t take the time to help the chicken, you’ll end up with option number two.

Getting crispy chicken skin isn’t hard to do at all. Obviously you will need to use skin-on chicken thighs or breasts, but all it takes it searing both sides of the chicken in a large skillet with some olive oil or butter. Cook just until the crispy skin forms and then place in your baking dish as directed in the recipe card below.

I do recommend that you use boneless chicken thighs for this recipe instead of bone-in. They just seem to work better when searing to start and finishing with baking.

Is it Better to Bake Chicken at 350°F or 400°F?

Personally, I prefer to bake chicken at around 365°F. There’s a couple of reasons for this but the main one is that 350°F seems to take too long and 400°F gives you a drier meat. At 365°F which is what this recipe calls for, you get a meal that cooks in a reasonable amount of time without being overly dried out.

The reality is that either temperatures are fine if you are watching the temperature of your meat. Using a meat thermometer, chicken is done when it reaches 165°F. This means you should pull your chicken out of the oven at about 160°F. Allow it to rest lightly covered and it will continue to cook to the required temperature. If you’re using bone-in meat, be sure not to touch the thermometer to the bone. You’ll end up with a false reading if you do.

Can You Freeze Garlic Herb Chicken Thighs?

While fresh is always best when it comes to flavor, you can certainly freeze cooked garlic and herb chicken thighs for future meals. Simply allow the chicken to cool completely, then transfer it to an airtight container or freezer bag and store it in the freezer for up to three months.

When you’re ready to enjoy it, simply thaw it in the refrigerator overnight and reheat it in the oven or microwave until warmed through.

Take a look at the recipe below. Once you make it, I’m certain you’ll love it as much as my family does. Serve it with mashed potatoes with some of the garlic herb sauce from the baking pan as a gravy. Add a vegetable like broccoli and cheese or a cauliflower/broccoli mix and you’ve got a hearty, nutritious weeknight meal that didn’t cost an arm and leg to make.

Ingredients

  • 8 Chicken thighs
  • 2 tsp. Herb de Provence mix
  • 1 tsp. Onion powder
  • ½ tsp. Oregano
  • ½ tsp. Salt
  • ½ tsp. Pepper
  • 1 tsp. Olive oil
  • 3 Garlic cloves minced
  • 1 tsp. Lemon juice

Instructions

  • Preheat oven to 365°F. Combine seasonings in a small bowl.
    2 tsp. Herb de Provence mix, 1 tsp. Onion powder, 1/2 tsp. Oregano, 1/2 tsp. Salt, 1/2 tsp. Pepper
  • Score chicken and coat with olive oil.
    8 Chicken thighs, 1 tsp. Olive oil
  • Rub seasonings onto chicken evenly.
  • Gently massage garlic onto chicken making sure some garlic gets down into the scored portions.
    3 Garlic cloves
  • Sprinkle lemon juice over chicken.
    1 tsp. Lemon juice
  • Add chicken thighs and a little olive oil to a skillet and sear chicken on both sides until the skin is lightly browned and crispy.
  • Transfer chicken to baking dish. Cover and bake for 35 minutes.
  • Uncover chicken and bake an additional 10 minutes to help the skin crisp back up.
