There are actually many more than three types of cheesecakes, but the basic ones that everyone seems to know are baked, mousse and set types. Baked cheesecakes are your typical NY cheesecake recipes and are baked in the oven to get them to set. They often use sour cream, vanilla extract and whipped cream as ingredients.
Mousse cheesecakes are finished and set with plain gelatin and are less common. This recipe is no-bake and uses a combo of cream cheese, powdered sugar and whipped topping to help it set. It also does not include eggs to help it set like a baked cheesecake does.
Can I Use Frozen Berries for Cheesecake?
If this were a berry cheesecake, I would tell you yes, however, the berries in this red white and blue cheesecake with Rice Krispie crust are more decorative than they are part of the flavor profile. They do add to the flavor obviously and pair incredibly well with the other flavors. But, because they add to the patriotic portion of the cheesecake, you will want to use fresh fruit.
How Do I Make the Blue Rice Krispie Crust Really Stand Out?
The crust of this red white and blue cheesecake is made of Rice Krispies cereal instead of the normal graham cracker crumbs. It’s also the blue part of your cheesecake. To really make the color in the crust pop, you will want to use gel food coloring instead of a normal one.
Can I Use a Graham Cracker Crust Instead?
Yes. If you prefer to use a traditional crust, you absolutely can. Simply mix up a bit of graham cracker crumbs with melted butter and a bit of sugar until you get a cohesive crust. Or, if you prefer, buy a premade graham cracker crust instead.

Yes you can! Since this is a no-bake cheesecake, the recipe is very versatile! To make red white and blue cheesecake bars, grease an 8×8 baking dish with butter and press the crust mixture into the bottom. Pour the cheesecake batter over top and follow the regular recipe from that point.
What to Do if a No-Bake Cheesecake Doesn’t’ Set?
While no-bake cheesecakes are super simple to make, you may occasionally have an issue where it doesn’t set. The first thing to keep in mind is that no bake cheesecakes have a different final texture than other cheesecake types do.
They are fluffier and creamier than a what you’re probably used to. But, if after you have chilled your cheesecake for an hour, it is still runny, you’ll need to fix things. You can do this a couple of different ways.
The simplest way to try and fix a no bake cheesecake that won’t set is simply by putting it in the freezer for 15-20 minutes. This may help it set the rest of the way.
The second way is to add a slight bit of xanthan gum or plain gelatin to the cheesecake layer. Be careful not to add too much or you will end up with a thickened brick and a probable taste change.
How to Store White Chocolate Cheesecake
Once the cheesecake is made and set, store it in an air tight container in the fridge. Because you don’t top this particular recipe with fruit until you’re ready to serve it, the cheesecake layer will harden on top if exposed to too much air.
You can also freeze this cheesecake recipe up to 30-days ahead of time. Allow it to thaw in the fridge and serve normally once its thawed.
Red White and Blue Cheesecake with Rice Krispie Crust

- 8 oz White chocolate chips
- 4 c. Rice Krispie cereal
- Blue Food Coloring
- 8 oz. Cream cheese
- ½ c. Powdered sugar
- 1 ½ c. Cool Whip
- 2 c Strawberries Quartered
- 6 oz Blueberries Optional
Instructions
- Melt white chocolate chips in a double broiler until smooth.8 oz White chocolate chips
- Once the chips are melted, mix in the Rice Krispies and blue food coloring and stir until well combined.4 c. Rice Krispie cereal, Blue Food Coloring
- Press cereal mixture into a greased mini-spring form pan and chill for 15 minutes to set the crust.
- While the crust is setting, combine the powdered sugar and cream cheese in a medium mixing bowl and mix until smooth.8 oz. Cream cheese, 1/2 c. Powdered sugar
- Fold in the Cool-Whip and mix until smooth1 1/2 c. Cool Whip
- Pour over the crust and refrigerate until ready to serve.
- When ready to serve, top with strawberries and blueberries if desired.2 c Strawberries, 6 oz Blueberries
