Hearty Slow Cooker Beef Stew Recipe

You know those nights when it’s chilly outside and you really just want a hearty and filling dinner idea? If you’re anything like me, that’s just about everyday once the weather turns cool. This hearty slow cooker beef stew recipe is one of those recipes that we were just talking about. It’s quick to toss in the crockpot, it’s easy to put together and it is oh so filling! It doesn’t get much better than this if you’re looking for an easy dinner recipe!

The thing that makes this stew recipe such an easy idea for dinner is that you can really play with personalizing it to your family’s preferences. You can add other veggies if you prefer to make it the perfect meal for you and your family. I personally like to add peas and green beans occasionally. It gives us the change we need to keep it from being boring and adds even more nutrition to an already veggie packed meal. Serve this with a slice of crusty bread on the side and you’ve got an AMAZING meal that even your kids will love! My Emma begs me to make this one because it’s so good!

Hearty Slow Cooker Beef Stew Recipe

This easy recipe is great for left overs too! It doesn’t freeze well, but keep it in the fridge and you can eat it for lunch the next day. Using leftovers in your meal plan for lunches is a fantastic way to cut your grocery costs. We save ours, eat them for lunch then at the end of the week we have a leftover buffet to make sure they all get used up. It might sound like a lot of trouble, but trust me, it actually makes my life a lot easier! When I’m looking to do a slow cooker menu plan, I always add this because it’s a super easy recipe, but I also add my white chicken chili recipe, my slow cooker green beans & sausage dinner recipe, my Slow Cooker Copycat Olive Garden Minestrone Soup Recipe and my slow cooker stuffed pepper soup recipe. Those 5 meals make enough that we eat very well for that week and then some!

You Will Need:

  • 2 lbs stew beef, cubed
  • 5 large potatoes, peeled and sliced
  • 1 large yellow onion, quartered
  • 5 large carrots, peeled and chopped
  • 1 can of beef broth
  • 1 can of water (Use the beef broth can)
  • 1 clove garlic,  diced
  • 1 Tablespoon paprika
  • 3 Tablespoons Worcestershire sauce
  • 1 Tablespoon sugar
  • 3 Tablespoons flour

To start, cube your stew meat, peel and slice the potatoes, and peel and chop the carrots and garlic. If the veggie sizes I give you are too big for your family, go ahead and make them smaller. It really won’t affect the taste at all! Layer the stew beef in the bottom of your crock pot. If you don’t have a garlic press for your garlic, you absolutely can use a tablespoon or two of minced garlic.

Next, add the onion, garlic and carrots.

Now add the potatoes to your crockpot. Yes, we’re layering things here just to make it easier on ourselves.

Pour the beef broth and water over it all then add the paprika, Worcestershire sauce, sugar and flour and give it a good stir.

Cover and cook on low for 6-8 hours until the meat is cooked through, your veggies are tender and your sauce is thick. How long you cook it will really depend on your slow cooker. Mine takes about 7.5 hours to get it done.

Serve hot and enjoy!

  • 3 Tablespoons Worcestershire sauce
  • 1 Tablespoon sugar
  • 3 Tablespoons flour
  1. In your slow cooker, place the beef in the bottom of your slow cooker
  2. Add in garlic, and onion
  3. Add in carrots, and potatoes
  4. Pour in your water and beef broth over everything
  5. Now add in your paprika, Worcestershire sauce, sugar, flour, and mix
  6. Cook on low for 6-8 hours until meat is cooked and veggies are tender.
