I am not a huge seafood fan, but my family absolutely loves it. For me, it is usually a texture thing that stops me from indulging. There are, however, one or two recipes that I absolutely adore and could eat anytime! This one is one of those anytime recipes! Stuffed mushrooms! Since we try to save money on eating out, that meant that I needed to find my own recipe to make at home. What followed was this absolutely amazing restaurant copycat recipe! These copycat Red Lobster Stuffed Mushrooms are the perfect appetizer or side for any meal! We love to have them along side of my copycat Red Lobster Shrimp Scampi recipe and oh my soul! It’s amazing! It really is one of the best copycat Red Lobster recipes I’ve ever tried!

If you’re looking for a new restaurant copycat recipe to add to your recipe book, this one is it! Not only does it have fresh mushrooms and creamy provolone but each mushroom is stuffed with yummy goodness that just sets off an explosion of flavor in your mouth with each bite! Plus they’re cheaper to make than going out to Red Lobster would cost you! By quite a bit actually! While these are a favorite in our home, every so often, we do like to go out to Red Lobster to eat. To help keep that cost down, we use gift cards that I have earned free from my favorite 20 tried and true places to earn free gift cards. When I can’t afford to actually go out, this copycat Red Lobster Stuffed Mushroom recipe is a perfect substitute.

Copycat Red Lobster Recipes – Copycat Red Lobster Stuffed Mushrooms

You will notice that we used imitation crab meat when we made these. There is a reason for that. Real crab meat is expensive and while I love the taste of it, I also like cheap family meals. So for the purposes of this post, we’re going imitation. If you would prefer to use real crab meat, go ahead. It won’t change the recipe at all. Preparation is the same and I’m 100% positive that they’ll taste even better!

You Will Need:

  • 1 lb fresh mushrooms
  • 1 T. Butter
  • 1 T. Extra Virgin Olive Oil
  • 1/4 c. Finely diced celery
  • 1/4 c. Finely diced onion
  • 1/4 c. Finely diced red pepper
  • 4 cloves garlic, minced or 4 tablespoons Minced Garlic
  • 1/2 lb imitation crab meat
  • 2 cups oyster crackers, crushed
  • 1/2 cup shredded cheddar or colby-jack cheese
  • 1/2 T. Garlic powder 
  • 1 tsp. Old bay Seasoning
  • 1 tsp. Sea Salt
  • 1 tsp. Ground Black Pepper
  • 1 egg
  • 1/2 cup water
  • 6 slices provolone cheese

To start, remove the stems from your mushrooms and set aside. Don’t toss them. You’ll use them later in the recipe. Wash your mushrooms, drain well and dry. Preheat your oven to 400°F.

In a medium skillet, heat the oil and butter together over medium/low heat until the butter is melted. Saute’ the celery, onion and red pepper until soft. When they’re just about softened, add the minced garlic and saute’ for a few minutes longer.

Next, chop half of the mushroom stems that you set aside earlier and mix them in a medium mixing bowl along with the remaining ingredients except for the provolone cheese.

Stir well to combine the mixture. Make sure that you give it more than a couple of stirs. You really want to get it mixed well so that you don’t have any clumps of flavor and instead have a good mixture of flavor.

Stuff each mushroom with the stem/pepper/onion/crab mixture. It’s okay if your mushrooms are overflowing a bit.

Cut each piece of provolone cheese into fourths and top each mushroom with 1/4 of a piece of provolone. Bake at 400°F 10-15 minutes or until the cheese is slightly brown and the mushrooms are heated throughout. Serve your copycat Red Lobster stuffed mushrooms as an appetizer or along side your favorite dish!

See? Amazingly easy, right? This is one of the easiest copycat Red Lobster recipes that I’ve ever come across and it is totally worth trying the next time you’re looking for a new restaurant copycat recipe to add to your menu.

  • 1 lb fresh mushrooms (wiped clean and stems removed)
  • 1 T. Butter
  • 1 T. Oil
  • 1/4 c. Finely diced celery
  • 1/4 c. Finely diced onion
  • 1/4 c. Finely diced red pepper
  • 4 cloves garlic (minced)
  • 1/2 lb imitation crab meat
  • 2 cups oyster crackers (crushed)
  • 1/2 cup shredded cheddar cheese
  • 1/2 T. Garlic powder
  • 1 tsp. Old bay
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 1 egg
  • 1/2 cup water
  • 6 slices provolone cheese
  1. Preheat oil and butter in a medium sized skillet. Sauté celery, onion, and red pepper until soft, adding garlic at the end.
  2. Chop half of the mushroom stems and mix together with remaining ingredients except for provolone cheese. Add cooked vegetables.
  3. Stuff mixture into the mushrooms and place 1/4 slice of cheese on top.
  4. Bake at 400° for 10-15 minutes.
