Every year since I was a little girl, I can remember our Christmas candies including various types of fudge that my uncle would make. He would make peanut butter fudge, chocolate fudge, vanilla and even a maple flavored fudge sometimes. As I’ve grown older and moved away, I no longer get to spend those Christmases with them so I’ve made it a point to make sure that my own Christmas baking includes fudge. While my uncle never made a cherry fudge recipe, this one has been added to our list to make every year. This cherry cordial fudge recipe isn’t a true fudge recipe. By that I mean that you won’t be using a candy thermometer and so on. Instead, I have turned it into a super easy (and quick!) way to make it that tastes exactly the same! My Emma actually makes this one all by herself!

Even though this fudge recipe is crazy easy to make, don’t let that fool you. It’s still delicious and it’s perfect for adding to a gift that you’re giving! I like to take this and other Christmas goodies that I’m baking and add them to a pretty holiday Ziploc container. Add a sheer ribbon and you’ve got a fantastic (and delicious!) homemade gift idea! If I’m gifting to someone, I will add chocolate fudge, buckeyes, crockpot candy and more!

Cherry Cordial Holiday Fudge Recipe

This recipe uses cherry frosting. For the sake of this post, I used canned frosting to make it easier to explain (plus Emma uses canned frosting when she makes it), but it will work just as well if you use a homemade cherry frosting recipe. In fact, it actually tastes better when you use a homemade frosting. It really is up to you which one you use.

You Will Need:

  • 1 can of Cherry frosting
  • 1 package of white chocolate chips
  • 1 tablespoons vanilla extract

  • Aluminum Foil
  • 8×8 baking pan
  • Rubber Spatula

In a medium sized sauce pan, melt the white chocolate chips, cherry frosting and the vanilla extract. Stir until smooth and fully combined.

Line your 8×8 baking pan with foil and spray with a non stick cooking spray to keep your fudge from sticking. Place a few of the cherries in the bottom of your baking dish then stir the rest into your fudge mixture. Be quick because as your fudge starts to cool it will start to harden.

Pour the melted chocolate mix over the cherries at the bottom of your pan and let cool completely. Use a rubber spatula to be sure you get all of the mix. If you want to speed up the cooling, pop it in the fridge for a bit.

Remove your fudge from your pan by lifting the foil out and peeling it down off of the sides. Cut into small pieces and enjoy!
