Celebrate Valentine's Day with a sweet and creamy Valentine's Day sandwich cookie. Made from a homemade sugar cookie recipe and filled with a strawberry flavor sweet frosting, they're a great foolproof treat!
Preheat the oven to 350° F. Add the butter and granulated sugar to a medium mixing bowl and cream them together. Add the vanilla extract and egg and mix until well combined.
1 c. Butter, 1 c. Granulated Sugar, 1 tsp. Vanilla Extract, 1 large Egg
Sift the flour into the mixture one cup at a time then add the baking powder.
3 tsp Baking Powder, 3 c. All-Purpose Flour
Divide the sugar cookie dough into 3 or 4 sections and use a rolling pin roll each section to about 1/4″ thick.
Use the heart shaped cookie cutter to cut an even number of hearts from your dough. Make sure you have an even number or you won’t be able to make your sugar cookies into sandwich cookies.
Bake them on an ungreased cookie sheet about 2″ apart for 7-9 minutes. Cool them on a wire cooling rack completely before moving onto the next step.
While your Valentine’s Day cookies are cooling, add the frosting and frosting tip to your piping bag. Once then cookies are cooled, pipe an outline of frosting around the edge of half your heart cookies.
1 can Strawberry Frosting
Gently place another heart sugar cookie on top of a frosted half to form the sandwich cookie. Repeat with the rest of the cookies you have.
Pour the Valentine’s Day sprinkles into a small mixing bowl and lightly dip the sides of the cookies into the sprinkles to coat the sides. Repeat until you have the entire side of the cookie coated.
