Grilled Steak with Blue Cheese Butter

For the Blue Cheese Butter

  • 1/2 C. Unsalted Butter Room Temperature
  • 1/2 C. Blue Cheese Crumbled
  • 1/4 tsp. garlic powder
  • 1/4 tsp. Kosher Salt
  • 1/4 tsp black pepper

For Each Steak

  • 1 tsp kosher salt
  • 1 whole steak cut of your choice


For the Blue Cheese Butter:

  • Combine butter, garlic powder, blue cheese, salt and pepper in a bowl.
  • Wrap in plastic wrap to create a log. Twist ends closed.
  • Chill for at least 2 hours.

For the Steak:

  • While grill is being prepared, rub kosher salt into each side of steak
  • Grease cooking grates with olive oil
  • Cook steak according to times in chart rotating and flipping half way through.
  • Remove steak from grill, cover with foil and let rest 5 minutes.


Cooking times for Grilled Steak

  • Extra Rare/Bleu: 2-3 minutes or 80°-100°F
  • Rare: 4-5 minutes or 120°-125°F
  • Medium Rare: 6-8 minutes or 130°-135°F
  • Medium: 8-10 minutes or 140°-145°F
  • Medium Well: 10-12 minutes or 150°-155°F
  • Well Done: 12+ minutes until internal temperature reaches 160°-175°F
