Grilled Cheese Recipe with Avocado and Tomato

What was your favorite meal when you were a kid? One of mine was grilled cheese and tomato soup. Like with my macaroni and cheese soup recipe, I needed a change as I got older. I needed something more filling and something more “adult” to my plain old grilled cheese recipe. I wanted something that had an amazing taste and was more nutritious than simply cheese melted on bread. What followed was a grown up grilled cheese recipe and oh. my. soul., it is amazing! It’s perfect for a quick and easy lunch which makes it a staple in my menu plan each week!

I absolutely love avocado so it only makes sense that I would include it in everything I possibly can. It has so many health benefits that I even try to sneak it into my recipes when I can! With this grilled cheese recipe, the avocado is almost as front and center as the grilled cheese itself! It is really one of my favorite lunch recipes!

Grown Up Grilled Cheese Recipe with Avocado and Tomato

When I make my own grilled cheese, I like to use Havarti and provolone cheese, but you can absolutely use whatever you happen to have on hand. Just keep in mind that a different cheese will change the overall flavor of the sandwich. I’ve used cheddar, colby and even homemade mozzarella cheese to change the flavor to suit whatever I happened to be feeling that day. They’re such simple sandwiches that you can really play with the additions to create a more complex taste.

You will need:

  • 2 pieces Texas toast
  • Mayo made with Olive Oil (or make your own homemade mayo)
  • Roma tomato, sliced
  • Avocado, sliced
  • 1 slice Havarti Cheese
  • 1 Slice Provolone Cheese
  • Garlic powder
  • Sea Salt and Black Pepper

To begin, heat a heavy bottom skillet over a medium heat and spread a thin layer of mayo over one side of each piece of Texas toast.

Next, layer the slice of Havarti cheese onto the mayo. Top with the sliced tomato and sliced avocado. Season with the garlic powder then salt and pepper to taste. I prefer using sea salt or Pink Himalayan Salt but use whatever you have on hand. Top it off with the slice of provolone cheese. Doing things this way helps the cheese to keep the tomato and avocado together once the cheeses melt.

Grown Up Grilled Cheese Recipe

Top everything off with the second slice of Texas Toast and grill until it is golden brown. I absolutely love using my panini press  for this when I don’t want to drag out and dirty up a skillet! It helps me keep the sandwich together and to give it a golden brown without the chance of burning it!
