I don’t know about you, but I’m not much good for the first hour or so after I wake up. It takes copious amounts of coffee and a bit of quiet for me to really get going. In other words, if I’m going to eat breakfast, I have to have easy breakfast recipes. Not some complicated four course meal that requires me waking up before the sun. That’s why I love breakfast recipes like my Bacon, Egg and Cheese breakfast casserole recipe. It’s super simple to throw together and tastes amazing. This easy banana pancake recipe fits the bill too. They use a homemade pancake mix, but can be ready to go in just a few minutes! Easy, quick and delicious? Sounds like my kind of recipe!

Easy Banana Pancake Recipe - Looking for a cheap and delicious breakfast recipe? This easy banana pancake recipe is perfect! Not too sweet and whips up in minutes!

This easy banana pancake recipe is best served with sliced bananas on top and with a homemade pancake syrup, but you can serve them however you would like. They freeze very well too so feel free to make extra and freeze them. To freeze them best, stack your pancakes in a gallon sized freezer bag with parchment paper separating each pancake so they don’t stick together.  I like to make a double batch so I can freeze half and serve half!

Breakfast Recipes – Easy Banana Pancake Recipe

This easy banana pancake recipe uses all-purpose flour, but if you would like to make them a bit healthier, you can swap it out for whole wheat flour without too many issues. I’ve never tried it with almond flour and am not sure if they would turn out correctly or not. If you do attempt to use almond flour, would you come back and leave a comment letting me know how well it works? I’d love to know! Also, if you use salted butter, feel free to omit the extra salt in the recipe. You won’t be able to tell.

You Will Need:

  • 1 1/2 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 6 Tablespoons butter, melted
  • 2 teaspoons vanilla extract
  • 1/2 cup mashed bananas
  • Additional sliced bananas and pancake syrup for serving

To prep, slice your bananas and use a hand masher to mash them until  you have 1/2 cup mashed. Preheat a medium skillet or a cast iron griddle with melted butter on low heat.

In a medium mixing bowl, combine the flour, sugar, baking powder and salt – if you’re using it – and stir until the dry ingredients are fully combined. Once the dry ingredients are combined, make a well in the center and add the milk, eggs, melted butter, vanilla and mashed bananas. Stir until your pancake batter is fully combined.

Cook your banana pancakes in the preheated medium skillet or a cast iron griddle over medium/low heat for 2-minutes on each side or until they’re golden brown and done. Serve with sliced bananas and pancake syrup. If you’re freezing these, allow them to fully cool before freezing.

  • 1 1/2 cup flour
  • 2 tablespoons sugar
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 6 Tablespoons butter (melted)
  • 2 teaspoons vanilla
  • 1/2 cup mashed bananas
  • Additional sliced bananas for serving
  1. In a mixing bowl, add flour, sugar, baking powder and salt and mix well. Make a well in the center of the dry mix and add milk, eggs, butter, vanilla and bananas and mix well.
  2. Pour onto a pre-heated skillet coated with cooking spray or butter.
  3. Heat 2 minutes, each side or until done.
  4. Serve with fresh sliced bananas and syrup.
