Easy Taco Casserole Recipe


Once upon a time in a land far away (also known as Iowa), there was a mom and step mom who had family coming in. Knowing she needed to cook something truly awesome for dinner and that the masses were requesting tacos, she set off to look at her grocery budget. To her horror she discovered that ye old grocery budget just didn’t have the room to budget for the extra cost of feeding 6 other people.

So what was a Mom to do? Make this easy taco casserole of course!

This easy taco casserole is called that because it truly is one of the easiest meals that you will ever put together. I love that it’s also VERY versatile so if you want to leave a topping or two out or even add them, you can. It has the classic taste of a taco, but what’s really great about it is that since your family is eating it on a plate? They will eat less and fill up quicker than finger foods meaning it becomes a cheaper meal. Make it in a 9×13 baking dish and you can feed several people with really decent sized portions. When I originally put the dish together, it fed 4 adults, 3 kids and 2 teenage boys with a small amount left over.

You Will Need:

  • 2lbs ground beef or ground turkey
  • 1 large green pepper, diced
  • 1 large red pepper, diced
  • 1 white onion, diced
  • Tortilla Chips
  • Taco Seasoning
  • Shredded Mexican Blend Cheese
  • Refried Beans (optional)
  • Salsa (optional)
  • Tomatoes (optional)
  • Any other taco toppings you’d like

Brown the ground beef and drain it really well. You might even consider rinsing it if you’re looking to get rid of 99% of the grease. Mix in the taco seasoning and cook down so it isn’t too watery.

In a 9×13 baking dish, layer a few tortilla chips. You can leave them whole or crush them. The decision is yours, just be sure to use enough to cover the bottom.

Add a layer of cheese onto the chips. You don’t want to use the entire bag, but I’m of the opinion there is no such thing as too much cheese on tacos or a pizza.

Add the ground beef in an even layer. At this point, add more cheese if you want, but you don’t have to.

Layer beans evenly if you’re using them.

Spread green peppers and onion onto the beans evenly.

See? No such thing as too much cheese. Add your final layer of cheese.

Add a few tomatoes if you’d like then pop in the oven and bake on 350 until heated through.
