Homemade Bread Recipe - Gluten Free, White or Whole Wheat Options

Preheat oven to 200°F. In a large metal mixing bowl, combine water, sugar and yeast. Stir to combine and let sit for 5-10 minutes until proofed.
Once the yeast has proofed, heat bacon grease slowly if solid. Allow it to cool slightly and add it and salt to the proofed mixture. Stir to combine.
In a separate bowl, combine flours if you are using multiple types. Once combined or if you're only using one type of flour, add 5 cups flour to the yeast mixture. Stir until well combined.
Add another 5 cups flour to the mixture and stir to combine. Once combined, scrape dough onto a smooth surface and knead for 7-10 minutes. You will know it is kneaded enough when the dough is smooth, elastic and pulls away from the surface easily. You may need to work in an additional 1-2 cups flour as you are kneading.Grease a large metal bowl, place the dough ball into the bowl and cover with foil. Turn the oven OFF and allow your dough to rise for 1 hour in the warm oven.
After the dough has risen 1 hour, remove from the bowl and knead for 1 minute. Divide the dough into 4 equal portions and place in loaf pans. Let rise in the oven for an additional hour.
Remove the loaf pans from the oven and preheat it back up to 350°F. Bake at 350°F 30-35 minutes or until golden brown. Remove each loaf from the pan immediately and allow to cool on wire cooling racks.
