  • Fill a large heavy bottom pot halfway with water and bring to a boil.
  • Peel, core and roughly chop apples.
  • Add apples to boiling water and blanch 1 minute. Remove, drain and set aside.
  • Add the sugar, cornstarch, nutmeg, cinnamon and salt. Use a wire whisk to mix them together.
  • Stir in the 5 cups water and bring the mixture to a boil over medium heat.
  • Add the apples and lemon juice.¬†Boil for 1 minute or until thickened.
  • Use immediately or process in a water bath canner for 25 minutes for both pints and quarts.
