Apple Pie Filling for Canning

Fill a large heavy bottom pot halfway with water and bring to a boil.
Peel, core and roughly chop apples.
Add apples to boiling water and blanch 1 minute. Remove, drain and set aside.
Add the sugar, cornstarch, nutmeg, cinnamon and salt. Use a wire whisk to mix them together.
Stir in the 5 cups water and bring the mixture to a boil over medium heat.
Add the apples and lemon juice. Boil for 1 minute or until thickened.
Use immediately or process in a water bath canner for 25 minutes for both pints and quarts.
