Strawberry Cake Mix Cookies with White Chocolate Chips
Strawberry cake mix cookies are so simple to make and delicious! The addition of white chocolate chips only makes them better! Perfect for Valentine's Day or just because, making up a batch is always a great idea!

Preheat oven to 350 and line a baking sheet with parchment paper. In a small bowl whisk eggs, oil and vanilla and set aside.
2 large Eggs, 1/3 c. Vegetable Oil, 1/2 tsp. Vanilla extract
Combine cake mix and baking powder in a medium bowl. Whisk lightly to combine.
Add wet ingredients to the dry ingredients and mix until smooth. Be sure to you don't have any lumps of dry cake mix.
Gently fold in the chocolate chips.
2 c. White Chocolate Chips
Drop by rounded tablespoon onto parchment paper covered cookie sheet.
Bake for 10 minutes. Do not allow the cookies to brown on top. Remove from oven and let rest for 5-10 minutes. Transfer to a wire cookie rack and allow your cookies to cool completely.
