That’s why some nights, it is so night to have an easy dinner idea to make. For us, especially when we’re trying to eat budget friendly meals, that means finding an easy chicken recipe to make. Chicken can be extremely easy on your budget if you don’t eat boneless skinless chicken breast all of the time. In fact? A chicken thigh recipe is usually one of the most budget friendly that you can make with meat. That’s there this herbed chicken thigh recipes comes into play…or rather your stomach! It’s quick, easy and oh so very, very good!

This is one of my favorites of all of the chicken thigh recipes that we make. Actually it might be my favorite. The only other toss up is the Chicken Thighs and Veggies that I make because that one comes out so tender with loads of yummy veggies! In either case, the can be made in the oven or the crockpot for a lot less money than most meals. Budget chicken recipes are some of my favorite b/c they’re usually incredibly tasty and since they’re a budget recipe, they don’t cost a ton to make! If you need to find a great deal on chicken, we use Zaycon Foods to buy our chicken. We buy it in bulk for much less than what we could in the store.

Easy Chicken Recipe – Garlic & Herb Chicken Thigh Recipe

This recipe uses a seasoning blend called herb de provence. If you’ve never heard of it, don’t feel bad. I hadn’t either before I started making this. It is a specific mix of herbs that is usually found in the Southeast region of France. It usually contains savoury, rosemary, marjoram, oregano and a few others including dried lavender leaves. Since I’m not fond of buying commercially blended seasoning blends, the recipe below will give you the ingredients to make your own herb de provence instead. You can however, buy herb de provence already blended pretty easily.

Combine your spices into a small mixing bowl and stir gently to mix well. This will make more than enough for this recipe so be sure you store your leftovers in an airtight container or spice bottle.


Garlic & Herb Chicken Thigh Recipe

Preheat your oven to 350 degrees.


Next, chop your garlic into medium sized pieces. You can mince it if you want, but I find it easier to just chop roughly.


Rinse your chicken thighs and pat dry then lay in a single layer in a casserole dish or on a cookie sheet. Then, using a sharp kitchen knife, score each thigh several times across the width of each piece. Once you’ve scored each thigh, rub the extra virgin olive oil over them all.


Next, rub the 2 teaspoons of the herb de provence recipe we made earlier, extra oregano, salt, pepper and onion powder onto each chicken thigh. You don’t want to go overboard on how much each piece has but you’ll need to make sure each piece has a good covering.


Now sprinkle your garlic over top. Try to get a few pieces of garlic into each thigh score to help flavor it. Once the garlic is added, sprinkle the lemon juice over your whole dish.


Cover and bake at 350 for 35 minutes. At the 35 minute mark, uncover and bake another 10 minutes. Let rest for a couple of minutes then enjoy!

  • For Herb de Provence Mix:
  • 1 tablespoon savoury
  • 1 tablespoon rosemary leaves
  • 1 tablespoon thyme leaves
  • 1 tablespoon oregano
  • 1 tablespoon marjoram
  • 1 tablespoons fennel seed
  • 1/2 tablespoon lavender leaves optional
  • For the Chicken Thighs:
  • 8 chicken thighs
  • 2 teaspoon herb de provence mix
  • 1 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon olive oil
  • 3 garlic cloves minced
  • 1 teaspoon lemon juice


  • Preheat oven to 365 degrees.
  • In a small bowl, mix together seasonings.
  • Score chicken.
  • Rub olive oil over chicken.
  • Evenly rub seasonings all over chicken.
  • Gently massage garlic onto chicken, (attempt to get a few pieces of garlic in scored chicken areas)
  • Sprinkle lemon juice over chicken.
  • Cover chicken and bake for 35 minutes.
  • Uncover chicken and bake an additional 10 minutes.
