Avocado Ranch Salad Dressing

I never knew the joy of foods made with avocado until I moved to Texas. They weren’t a fruit that you could find very often where I grew up or if they were, my parents never bought them so they weren’t something I was used to tasting. Needless to say, the first time I tasted one, I fell in love. That’s where this avocado ranch salad dressing recipe comes into play. It combines two foods that I love…avocado and ranch dressing.

This salad dressing recipe whips up very quickly with very little work so it is perfect for those nights when you just want to take it easy. All you really need aside from the ingredients is a blender. THOSE are my types of recipes! Quick, easy and tasty as all get out! This recipe makes 2 cups so be sure to adjust the recipe if you need more or less. This dressing is perfect served over a salad or drizzled over tacos or fajitas!

Avocado Ranch Salad Dressing Recipe

You Will Need:

  • 1 ripe avocado
  • 1 small jalapeno, seeds removed
  • 1 green onion
  • 1/4 cup cilantro, packed
  • 5-6 springs of fresh parsley
  • 1 cup of fresh spinach leaves, packed
  • 1 teaspoon white vinegar
  • 2 tablespoons lime juice
  • 1/2 cup real mayonnaise
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 garlic clove, peeled
  • 1 teaspoon honey
  • 1/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3-5 tablespoons milk

Remove the seed from the avocado and scoop the flesh into a blender then all of the remaining ingredients except for the milk. Blend until smooth making sure you stop to scrape down the sides a couple of times.  If you don’t have a very powerful blender, chop the garlic and jalapeno before adding so that it gets fully broken down into the dressing.

Add the milk, one tablespoon at a time, until it reaches the consistency you want then taste and adjust the seasonings to fit your taste buds. You can add more lime, salt, pepper or any of the other ingredients to fit your preference. As you’re adjusting the taste, take a look at the color. The spinach is used for color only in this recipe. If you want a deeper green, you can add more. It has little to no effect on the overall flavor.

 

Chill for at least 30 minutes before serving. Store in the refrigerator in a mason jar with a tight lid.
