Taco Stuffed Pasta Shells Recipe

 

Around here? Anything with the word taco in the name is usually a hit and this recipe was no exception! It was gobbled up by even the pickiest eater and immediately went into my tried and true file! I mean why wouldn’t it? Pasta AND tacos? Together? Ohhhh yeah….

 

The best part about this recipe though? It’s super cheap! It can be made no matter what your food budget is!

 

You will need:

  • 1  1/2 pound ground beef (browned)
  • 16 oz box  jumbo pasta shells
  • 3 oz cream cheese, softened and cut to cubes
  • 1 teaspoon salt
  • 2 tablespoons butter, melted
  • 1 Taco seasoning Packet
  • 2 cups shredded cheddar cheese
  • tortilla chips
  • 1 cup sour cream (optional)
  • Your favorite Taco Toppings!

 

Directions:

  • Preheat oven to 350 degrees and grease a 13×9 inch baking dish (casserole dishes work well too!)
  • Brown Ground beef, breaking up into small pieces until cooked through. Drain grease
  • At the same time cook pasta shells according to package directions. Drain and rinse with warm water. Return to pan and coat with melted butter.
  • Reduce heat to on the meat to medium low and add Taco Seasoning Pack and cook as directed.
  • Drain Sauce to a bowl and save for later.
  • Add cream cheese and salt to meat mixture, melt into meat
  • Fill shells with beef and cheese mixture and place in greased baking dish.
  • Pour taco sauce (saved earlier) over shells, can also use salsa if not enough sauce was produced
  • Cover with foil and bake for 15-20 minutes.
  • Uncover and top with cheese and some crushed tortilla chips over the top, bake uncovered for additional 15-20 minutes or until bubbling.

 

Once its all baked and gooey you can add any taco topping you want, sour cream, salsa or more tortilla chips on top.  Go nuts and make it your own!
