Strawberry Salad with Honey Poppy Seed Dressing


So in case you didn’t know? It is HOT here in Texas. Like boil my blood, really cook an egg on the hood, step outside and your body steams kind of hot. When it gets this hot? There is nothing better than a meal that I can make without having to heat up the kitchen. This Strawberry Salad with Honey Poppy Seed Dressing is one of my favorites for when I need to “cook” but don’t want to heat up the house!

This Strawberry Salad with Honey Poppy Seed Dressing is perfect for your summer table! Picnics, family dinners or just because, it's the perfect addition!

 

I’ve already mentioned that I absolutely adore summer because of fresh berries and I meant it. I eat berries on everything I can during the summer, including my salads!  The best part about this salad is that it comes together SO quickly. A few minutes and you’re ready to go! This salad doesn’t need to be just a lunch idea either! We love to have it as a main course for dinner sometimes too since it’s so filling! Even my Emma loves it! Don’t make this ahead of time and serve chilled of course.

You Will Need:

  • 1 bag of spring mix salad
  • 1 cup sliced fresh strawberries
  • 1/2 cup crumbled Gorgonzola cheese
  • 1/2 cup of Red Onion chopped
  • 1/2 cup of walnuts

Place the spring mix in a large bowl. Add chopped Red onions, Walnuts, and Strawberries. Place crumbled Gorgonzola on top and drizzle the Honey poppy seed dressing over the top! Enjoy.

  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/2 cup olive oil
  • 2 tbs of poppy seeds
  • salt and ground black pepper to taste

Stir the balsamic vinegar and honey together in a bowl; slowly stream the olive oil into the mixture while whisking continuously stir in the poppy seeds.
