I love using my slow cooker once the temperatures turn cooler and nothing is as nice as an all in one meal like this Simple Slow Cooker Jambalaya.  With meat, starch and veggies all in one this is a meal sure to please the whole family.  While this recipe is fairly mild when it comes to spice, you may want to kick it up a notch or two with a dash more seasoning to create a traditionally spicy Cajun treat.  We used just sausage in ours as shown in the picture but many include chicken, shrimp and even ground meats.  Use what your family prefers or a mix of 2 or more meats.

You Will Need: 

  • 1 Pound Andouille Sausage Sliced
  • 1 Large (24-28oz) Can Diced Tomatoes in Juice
  • 1 Large Red Onion Chopped
  • 1 Large Bell Pepper Chopped
  • 1 Tablespoon Minced Roasted Garlic
  • 2 Cups Low Sodium Chicken Broth
  • 1 Tablespoon Cajun Seasoning
  • 1 Tablespoon Dried Parsley
  • 1 Teaspoon Oregano
  • 1 Teaspoon Smoked Paprika
  • 2 Cups Water (divided)
  • 1 Pound Bag Rice

 

In crockpot stir together all ingredients except for rice.  Allow to cook on high for 1 ½ hours.  Add in rice and additional 1 cup water.  Stir until well blended and cook for an additional 45 minutes to 1 hour.  Watch and stir occasionally in last half hour to ensure no sticking and that no additional water is needed.
