Cinnamon Roll Pancakes with Cream Cheese Icing Recipe


I have a quick question for you. Do you ever have breakfast for dinner? We do because not only does it help us save money on groceries since breakfast recipes are usually cheaper to make, but also because some of our favorite recipes are breakfast foods. We absolutely love my bacon, egg and cheese breakfast casserole at night, sausage gravy & biscuits and of course? Pancakes! I’ll confess though that I get really bored with the same old pancake recipes. Don’t get me wrong. Buttermilk pancakes are amazing, but sometimes? You just want something different. Sometimes? You want cinnamon rolls.

I don’t think anyone would fault me for my love of a warm and fluffy cinnamon roll, but I’m absolutely certain they wouldn’t when I combine my recipe for cinnamon rolls with pancakes. Why? Because you get amazing, warm, melt in your mouth and absolutely perfect pancakes!Sometimes? You want something more for breakfast and these? Oh my soul! These cinnamon roll pancakes combine the best of your favorite cinnamon roll recipe with a delicious buttermilk pancake! Warm, gooey and melt in your mouth, your breakfast will never be the same again!

No, he’s not a chef but Lord that man does love pancakes and he’s picky about them because of it! I’m totally messing with you. They eat what I put in front of them, but these cinnamon roll pancakes really are amazing! They’re one of my favorite breakfast recipes and after you try them? I’m pretty positive they will be one of yours too! Combine your favorite recipe for cinnamon rolls with your favorite buttermilk pancake recipe and bam! Insta-awesome!

Cinnamon Roll Pancakes Recipe

You know the really sad part? I have this awesome cinnamon roll pancakes recipe but I don’t have an actual recipe for cinnamon rolls. That makes me sad but it’s because I’ve never found one that really floats my boat. One of these days I’m going to find one but until then? These will have to do! These really are the perfect pancakes! They melt in your mouth, are easy to make and disappear just like the “real” things do! If you don’t want to make homemade pancakes like the ones below, you can use Bisquick to make them easier.

By the way, if you, (unlike me), do have a recipe for cinnamon rolls, the filling and icing for these is fantastic when used to make them! I’ve had the filling and incing in both and oh my soul! If you don’t have access to buttermilk, you can substitute buttermilk powder in these. Don’t use the sour milk substitute on them though. They don’t taste right.

You Will Need:

  • 1 1/4 cup flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 egg, slightly beaten
  • 2 tablespoons vegetable or canola oil
  • 1 1/2 cup buttermilk
  • 6 tablespoons butter, melted
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 2 oz cream cheese
  • 2 Tablespoons butter
  • 2 teaspoons vanilla
  • 2 cups powdered sugar

Using a flour sifter, sift the flour, granulated sugar, salt, baking soda, and baking powder into a medium mixing bowl. In another bowl (or your measuring cup if it is big enough), combine the oil, egg and buttermilk together then add to dry ingredients. Stir gently just long enough to fully combine the dry and wet ingredients.

In a separate bowl, combine the melted butter, brown sugar, vanilla and cinnamon. When mixed, pour into something that you can “draw” with. We use a condiment bottle, but you can use a sealed Ziploc bag with one end snipped off if you need.

Heat your griddle until hot and a droplet of water “dances” on the surface. If the water sizzles, it’s too hot. It should jump around a bit. While the griddle is heating up, slowly melt the cream cheese, 2 tablespoons butter, vanilla and powdered sugar in a small saucepan over low heat. If it melts before your pancakes are done, you can leave it in a warm place while they finish.

Once your griddle is hot, pour 1/4-1/2 cup batter for each pancake. Grab the filling and working from the inside out, swirl the cinnamon roll filling onto the top. When the edges are set and the pancake is bubbly (like shown in the photo), flip the pancake just like with a “regular” pancake recipe.

Once the other side is fully cooked, plate your cinnamon roll pancake swirl side up then drizzle your cream cheese icing over the top. You can add another swirl of filling if you would like to.  Serve warm and trust me…you will enjoy! They’re just like your favorite recipe for cinnamon rolls and really are totally perfect pancakes! You’ll see!

  • 1¼ cup flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 egg, slightly beaten
  • 2 tablespoons vegetable or canola oil
  • 1½ cup buttermilk
  • Cinnamon roll filling:
  • 6 tablespoons butter, melted
  • ½ cup brown sugar
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon
  • Cream cheese topping
  • 2 oz cream cheese
  • 2 Tablespoons butter
  • 2 teaspoons vanilla
  • 2 cups powdered sugar
Instructions
  1. Combine dry ingredients in one bowl.
  2. The combine oil, egg and buttermilk together in another bowl or measuring cup
  3. Stir wet into dry ingredients and mix gently just until they are combined.
  4. Mix all ingredients together for the cinnamon roll filling, then place into a plastic sandwich bag or condiment bottle.
  5. Slowly melt the ingredients for the cream cheese topping in a small saucepan. This can be left in a warm spot on the stove while cooking the pancakes.
  6. Heat griddle, and pour about ½ cup of pancake batter into the pan. Snip one corner of the bag with filling and swirl on top of the pancake while cooking. When it begins to get bubbly, turn to finish cooking on the other side, just like a regular pancake.
  7. When the pancake is cooked through, place it on a plate swirl side up, add a second swirl of cinnamon topping if desired.
  8. Drizzle the cream cheese frosting over top. Enjoy!
