Easy Popcorn Balls Recipe

Halloween as a child meant going door to door in our neighborhood trick or treating.  Every year there was one lady who made these delicious popcorn balls all wrapped in cellophane and tied with an orange ribbon.  I didn’t care about getting any other candy but that one treat was a must each year and you’d find us showing up earlier and earlier to make sure we got there before she ran out.  For many years I have looked all over the internet, in cookbooks and simply in stores near the holidays to find a duplicate of her recipe and found none.  Finally I dove into the kitchen and started working diligently to recreate the recipe on my own and this is what I came up with. I hope you enjoy these Easy Popcorn Balls just as much as my family always has.
You Will Need: 

  • 6 cups air popped popcorn {no oil or butter}
  • 1 Cup Packed Brown Sugar
  • 1/3 Cup Light or Dark Corn Syrup
  • ½ Cup Unsalted Butter
  • ½ Teaspoon Salt
  • ½ Teaspoon Baking Soda
  • 1 Tablespoon Vanilla Extract

In medium heavy bottom saucepan, melt butter, brown sugar, corn syrup and slat stirring constantly until it comes to a boil. Let boil for 7 minutes on medium heat stirring occasionally.  Remove from heat; mix in vanilla and baking soda.  Pour over popcorn gently stirring with spoon until most pieces are coated.  Allow to cool for 2-3 minutes and then lightly spray clean hands with non-stick spray (or wear latex/plastic gloves) and form popcorn balls.  These can be wrapped individually or decorated with chocolate drizzle, etc. as desired.
