Easy One Pot Pizza Pasta – Quick Budget Dinner Idea!


 

As a working mom, I am always on the hunt for quick and easy recipes that 1. don’t cost half of my grocery budget to make 2. that everyone in the house will eat and 3. that won’t make a huge mess for me or whoever is doing dishes that night to clean up. That’s why I love this easy one pot pizza pasta! Its so quick to make that the entire meal works up in about 20 minutes, its crazy cheap to make at around $6.00 for a huge pot and it is tasty, tasty so much so that I don’t have any issues at all getting the family to eat leftovers! Cheap, easy and tasty? Thats what we call winning!

The best part about this recipe is that its so stinking customizable that it isn’t funny. You can really make it your own with just a few extra ingredients! As a side note, this recipe also freezes very well. Just make it up to the 2nd to last step and freeze! Easy peasy! To cook, place in a 350 degree oven until it is warm through out and the cheese on top is melted.

 

You will need:

  • 1-2lbs ground beef (or do half ground beef, half italian sausage if you prefer)
  • 1lb Pasta of your choice (I use penne or rotini depending on what I have on hand and I also use whole wheat pasta for a little extra health)
  • 1 jar Pasta or Pizza Sauce (again, depending on what you have on hand)
  • 1/2 cup cottage cheese
  • 1/2 cup ricotta cheese
  • 8 oz mozzarella cheese
  • pepperoni
  • Garlic Powder, Oregano, Onion Powder, Thyme, Basil
  • any other pizza toppings that you would like to add (peppers, mushrooms, onions, etc)
  • Large Pot (I use a dutch oven)

Directions:

In your large stockpot, cook pasta according to directions, drain and then set aside. Next, cook your ground beef in the same pot (no, not while the pasta is in it) then drain and rinse well.

Return the ground beef to your pot (be sure to give the pot a good rinse too so you don’t end up with grease everywhere) and stir in the pasta or pizza sauce.  Mix in a bit of garlic powder, onion powder, oregano, thyme and basil and stir well.

Turn heat down to low.

Next, mix in the cottage and ricotta cheeses and give a good stir. I use these because we really like the creamy consistency that this gives it. You could skip if you wanted to. Also, lets not mention that I was using a slotted spoon to do this. Its the one that I used to cook the pasta and I was not wanting to dirty another one. Dishes are bad ya’ll!

Next, grab a big handful of mozzarella and toss it in. Seriously. I don’t measure this stuff. Even the measurements in the “you will need” part of this post are guesstimates. Thats why I give you pics. If I had to guess? I’d say that this was probably close to 4oz of cheese. Also, yes you see yellow cheese on the spoon. I had a tiny amount of colby that I needed to get used so I tossed it in too.

 

When it comes to cheese I’m of a mindset of the more the merrier!

While you’re at it, grab a handful of pepperoni and toss it in the pot too. Again, throw whatever looks good in there for an amount and then stir. Stir like your dinner depends on it!! Wait..it does. Give a good mix up so that everything is coated with the sauce/meat mixture well.

Once you’ve got it good and mixed up, toss the rest of the shredded cheese on top. Oh look! MORE cheese that I needed to get used up before it got all hard an yucky! (3 slices of mozzarella)

Throw some more pepperoni on top and add some more oregano, garlic powder, onion powder, basil and thyme to the top. Cover with a tight fighting lid and let sit on low heat. If you are freezing this recipes, this is where you would stop and freeze. To cook, follow the instructions at the very top of this post.

  7. Sprinkle the remaining shredded cheese on top.
  8. Add a few pieces of pepperoni on top
  9. Put lid on, turn heat to low and let cheese melt.
