Easy Macaroni Salad Recipe


Ya’ll? I have a serious love affair with summer. Okay, a partial love affair because I hate the Texas heat, but summer brings one thing that winter doesn’t necessarily have. Awesome food. Summer is fantastic for great grilled foods like my tequila lime chicken recipe and for fantastic “summer” foods like this easy macaroni salad recipe! It’s the perfect side to your BBQ, great for picnics and a staple at family reunions across the country. You can seriously not go wrong with this one!

What makes this macaroni salad recipe so great tasting is the secret ingredient. I’ve made quite a few different recipes for it, but none of them called for lemon juice. The addition of the lemon juice gives it a tangy taste that isn’t too tangy. What you end up with is a creamy and absolutely delicious easy macaroni salad that tastes like it took forever to make. We’ll keep it between us that it really didn’t.

Easy Macaroni Salad Recipe

This recipe is fantastic as soon as it’s made and cool, but if you really want to kick the flavor up a few notches, make it up the day before you need it. It is absolutely better the next day since all of the flavors in the sauce have had a chance to really blend together. Just be sure that you store it in an airtight container after it is made so that it doesn’t dry out.
 

Ingredients needed to make this easy macaroni salad recipe

  • 1 box elbow macaroni, cooked
  • 1/2 carrot, grated
  • 1/2 medium onion, diced
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 1 celery stalk, chopped
  • 5 hard boiled eggs, roughly chopped
  • 1 teaspoon lemon juice
  • 1 1/3 cup of mayonnaise
  • 1/2 teaspoon paprika + more for garnish if desired
  • salt and pepper to taste

 

To prep, cook the elbow macaroni according to the directions on the package and make your hard boiled eggs. You’ll also want to chop the onion and celery and using a cheese grater with a fine grate side, grate the carrot.

In a large mixing bowl, combine the mayonnaise, vinegar, sugar, lemon juice, paprika, salt and pepper together until fully combined.  I prefer to use a plastic or glass mixing bowl over a metal one for this. Not sure why but it tastes differently when I use a metal one. Yes. I am strange. Why do you ask?

Once the sauce is mixed, add the celery, carrot and pasta to the sauce and gently stir to combine. Make sure you get the pasta mixed in well with the sauce. Otherwise you’ll have bites of pasta that are plain.

Add the hard boiled eggs to your pasta mixture and stir gently to combine. Be sure not to stir too hard or you’ll cause the eggs and pasta to be crushed and mushy. You should be folding them into the mixture more than you are stirring.

Garnish with extra paprika if you want and refrigerate until cold. I told you it was a super easy recipe!

  • 1 box elbow macaroni, cooked

  • 1 and ⅓ cup of mayonnaise
  • ½ teaspoon paprika (more for garnish, if desired)
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon pepper (or to taste)
Instructions
  1. In a big bowl mix mayonnaise, vinegar, sugar, lemon juice, paprika, salt and pepper together.
  2. In the same bowl, fold in macaroni to mayonnaise mixture.
  3. Add in vegetables and eggs, blend together, cover and refrigerate until ready to serve.
