Ever since I was a little girl, my favorite comfort food was always mac and cheese. That cheesy, gooey goodness always just has a way of lifting my spirits when I need it to. Not to mention? It’s totally quick and easy for a weeknight meal. Occasionally though, I want a more grown up version of the good stuff….and that’s where this Mac & Cheese soup recipe comes into play. It’s really easy to make, absolutely delicious and yes…mac & cheese lovers everywhere will love it!

  • 1 cup elbow macaroni
  • 2 tablespoons of olive oil
  • ⅔ cup of chopped carrots
  • ⅔ cup of chopped celery
  • ⅔ cup of chopped onions
  • 2 cups of heavy cream
  • 1 ½ cups of milk
  • 1 ½ cups of shredded cheddar cheese
  • Salt and Pepper to taste
  • 2 tablespoons of cornstarch
  • 2 tablespoons of water
  • 1 8oz can of creamed corn

To start, chop the celery, carrots and onions into whatever sized pieces you want. I like to keep ours a little on the larger side so that we can taste them. Then, cook your macaroni according to whatever it says on the box. (i.e. water + pasta = boil lol). Don’t cook all the way, cook it al dente.

Next, saute the carrots in on medium heat for 2 minutes, the add the carrots and onions. Cook them for 5 minutes along side of the carrots.

In a large stockpot, stir together the heavy cream, milk, and cheese. Stir constantly until the cheese melts then add your salt and pepper.Next, mix water and corn starch until smooth and add to milk and cheese mixture.

Cook until mixture thickens and starts to boil the reduce the heat to a simmer.

Add the vegetables, creamed corn and cooked macaroni and stir well.

Cook until thoroughly heated and serve hot.
