Christmas Morning Crepe Rolls Recipe

 

Around here on Christmas morning, there is always a special breakfast made. Each year it’s different than the year before and it’s always something that I don’t make very often. This Christmas Morning Crepe Rolls recipe is what’s on the menu for this year! They’re easy to make and just the right amount of sweet and savory to provide a special Christmas breakfast! Try them! You won’t be sorry that you did!

 

You will need:

For the Crepes:

  • 1 ½ cups flour
  • 3 eggs
  • ¾ cup water
  • ¾ cup milk
  • ¼ tsp salt
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 3 Tbs melted butter

 

For the Filling:

Filling

  • ½ cup chopped candied pecans
  • ½ cup apricot cake/cookie filling (you could substitute with another flavor)
  • ¾ cup melted chocolate

 

Directions:

In small mixing bowl, mix together milk & water and whisk together with eggs.

In a separate bowl stir together flour, salt, and cinnamon.

Add the wet ingredients to the dry and blend together.  Add vanilla and melted butter and beat together until smooth.

Pour approximately 1/3 cup batter into a lightly oiled, pre-heated pan.  Spread batter around pan by tilting in a circular motion.  Cook for approximately 2 minutes on each side, or until golden.

After crepes are cooked, spread ½ Tbs of melted chocolate over the crepe.  Top with ½ Tbs of apricot filling and sprinkle with chopped pecans.  Roll crepe, placing the open edge down.  Top with drizzled melted chocolate or syrup of your choice (caramel syrup is perfect!).
