Chocolate Chip Almond Biscotti Recipe

 Chocolate Chip Almond Biscotti Recipe

If you are a coffee lover and a chocolate lover, chances are good that you also LOVE having something to dip into your cup! For me? I adore those little chocolate covered spoons, but this chocolate chip almond biscotti recipe? Well it’s my 2nd favorite! This is one of those things that people love to munch on with their coffee at the coffees shops but are often too intimidated to make themselves, but let me tell you a little secret. You will need: 

  • 2 cups all purpose flour
  • 1 cup granulated sugar
  • ½ cup cocoa powder
  • 1  tsp. baking powder
  • ¾ cup milk chocolate chips
  • 1 tsp. salt
  • 6 Tbsp. butter, softened (BUTTER…not that oily crud they call margarine)
  • 2 eggs large
  • 1 ½ tsp. almond extract
  • 4 oz. semi sweet chocolate chips
  • ¼ cup almond slivers

 

Directions:

Preheat oven to 375° and line baking sheet with parchment paper. Don’t be like me and decide that wax paper is the same thing….really…it’s NOT. Your smoke alarm thanks you. 😉

In a medium sized mixing bowl, cream the sugar and butter together until…well? Creamy.

Add in eggs one at a time, mixing gently after each one. Once all of the eggs are added, add in the vanilla and combine well.

In a separate bowl mix flour, cocoa powder, baking powder, and salt.

Add flour mixture a little at a time to wet ingredients until just combined then gently fold in chocolate chips. Fold…I kinda hate that term. Stir gently. There. That’s better.

Flour your hands well and put the dough onto the parchment paper. Use your hands to shape the dough to a “log”  about 10” long by 4” wide. Bake for 30 minutes then remove from oven and let rest for 5 minutes.

Cut ¾” slices and lay each cut side down, place back in the oven and back for an additional 10-15 minutes until crisp. Remove from oven and place on a cooling rack.

Melt additional chocolate chips in the microwave in 30 second increments, stirring each time until thoroughly melted. Spread melted chocolate over half of the cooled biscotti using a spatula. Sprinkle or roll in almonds while the chocolate is still wet.

 

Allow chocolate to harden then store in an airtight container for up to a week.

  6. Flour hands well and place dough on prepared sheet, forming a flattened out log shape about 10” long by 4” wide then bake for 30 minutes, remove from oven and let rest for 5 minutes.
