Quick & Easy Chicken Salad Wraps

Is it lunch time yet? If so, head over and grab this awesome recipe! These Quick & Easy Chicken Salad wraps are perfect for a quick lunch or even a light dinner!

Yum! Chicken Salad is great for lunch but sometimes? I get bored with the same old humdrum of a chicken salad sandwich and look for new ways to keep my favorites in my menu. This recipe combines a recipe for chicken salad with tortilla wraps to serve this delicious sandwich in a new way. These are also great if you’re serving a party as an appetizer! Just slice the wrap into pinwheels and serve as an appetizer! I guarantee that platter will be empty!
You Will Need:
  • 4 cups cooked chicken breast, cubed (canned or cooked at home)
  • 1 1/2 cups mayonnaise
  • 1/3 cup dried cranberries
  • 1 cup celery, diced
  • salt and pepper as needed
  • 1 head iceberg lettuce
  • tortilla wraps
Directions:
In a large bowl, combine the cooked chicken, mayonnaise, dried cranberries, celery, salt, and pepper. Mix well to combine.
Lay out the tortilla wraps with a piece of iceberg lettuce on each.
Divide the chicken mixture among the tortillas, spooning a small amount of it onto each wrap on top of the iceberg lettuce.
Roll the tortilla wraps around the iceberg lettuce and chicken salad, and insert a toothpick into the center of each to hold it in place. Remove the toothpicks before serving.

Notes
For another serving suggestion, try making the wraps as written and slicing them to create pinwheels, which are great for parties where finger food is needed.
