Banana Split Yogurt Parfait Recipe with Greek Yogurt


Texas has broken 100 degrees which means summer is officially here! There’s no better summer treat than a banana split! I’m not too keen on the ice cream content though since my Tom and I are both trying to live a healthier life and get back into a shape other than round. That’s why I absolutely adore these Banana Split Yogurt Parfaits! They taste just like the real thing and they’re super easy to make!

Now don’t get me wrong. We love dessert in my house- banana splits, sundaes, cake, whatever. Give us sweets and we are a happy group. However, we are trying to eat a little healthier and so I have to find creative and delicious ways to make desserts that are not so fattening. Enter one of my favorite ingredients- plain Greek Yogurt. Plain Greek yogurt can be flavored up to create just about any flavor profile you want, just add additional toppings and you have your favorite desserts lightened up a lot with the added benefit of calcium and protein. This one is one of our favorites and trust me…it tastes pretty darn close to the real thing!

 

In the mood for a cool, but refreshing summer dessert that won't bust your waistline like ice cream will? Try this Banana Split Yogurt Parfait! It's so close to the real thing you'll never notice!

For each parfait you will need:

  • ¾ cup plain Greek yogurt
  • ½ banana, sliced and smashed
  • 3 or 4 strawberries, washed and sliced
  • 2-3 tsp. pineapple preserves
  • 2 tsp. chocolate sauce
  • ½ tsp. vanilla extract
  • 1 tsp. honey

 

Now put it all together….

Construct your parfait by drizzling chocolate sauce inside a small 8 oz. mason jar.

Combine yogurt, honey, and vanilla.

Add a few bananas to bottom of your mason jar or dish.

Add ¼ cup of the yogurt mixture.

Alternate yogurt  with the sliced strawberries, mashed banana slices, and pineapple preserves.

  • ¾ cup plain Greek yogurt
